  3. 1/4 cup 59ml Vegetable oil

  4. 1/2 teaspoon 2 1/2ml Vanilla

  5. 1/2 cup 118ml Canned pumpkin

  6. 1 tablespoon 15ml Grated orange rind

  7. 3/4 cup 46g / 1.6oz All-purpose flour

  8. 1 teaspoon 5ml Baking powder

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 1/2 teaspoon 2 1/2ml Cinnamon and nutmeg

  11. 1/2 cup 73g / 2.6oz Chopped dates and nuts

  1. Recipe Instructions In large bowl, with electric mixer, beat together eggs, sugar, oil and vanilla. Beat in pumpkin and orange rind. In separate bowl, mix together flour, baking powder, salt and spices. Stir into creamed mixture. Stir in dates and nuts. Spread batter in greased and floured 9-inch (23 cm) square or 11- x 7-inch (28 x 18 cm) cake pan. Bake in 350F/180C oven (or 325F/160C oven if using glass or dark non-stick pan) for 25 to 30 minutes or until top springs back when lightly touched. Let cool and cut into small bars.
