  1. Oven Fried Eggplant

  2. Serves 4. 6 tablespoons all purpose flour

  3. 1/4 cup toasted wheat germ

  4. 3 tablespoons sesame seeds

  5. 1/4 teaspoon salt

  6. 2 large egg whites

  7. 1 tablespoon water

  8. 1 large eggplant (1 pound) peeled, and sliced

  9. 1/4 inch thick

  10. 2 tablespoons olive oil

  11. 4 lemon wedges

  12. Preheat the oven to 450F. Lightly grease a baking sheet. On a

  13. large plate, combine the flour, wheat germ, sesame seeds, and salt.

  14. In a shallow bowl, stir together the egg whites and water. Dip

  15. the eggplant slices first in the egg white mixture, then in the

  16. flour mixture to coat. Arrange on the baking sheet; drizzle each slice with the oil and bake for 10 minutes.

  17. 400F and bake

  18. 10 minutes longer.

  19. Turn the eggplant slices over and bake another 10 minutes or until

  20. crisp, golden and tender. Serve with lemon wedges if desired.
