  1. 3 cloves garlic, with skin still on

  2. 1 T butter, melted

  3. 1 15-oz. can chickpeas, drained with

  4. 1/2 cup juice reserved

  5. 1 T lemon juice

  6. cup olive oil

  7. pinch of salt

  1. Preheat your toaster oven to 400 degrees Fahrenheit.

  2. Make a small aluminum tray with a square of aluminum foil by crimping each side up to make a dam.

  3. Put the garlic in the foil tray and pour the melted butter over each clove to cover.

  4. Roast the garlic for 10-15 minutes until golden brown. You do not need to wait until it is spreadable consistency. Squeeze the garlic out of their skins.

  5. In a food processor, add the chickpeas, lemon juice, salt, and the peeled roasted garlic. Process until mostly smooth.

  6. With the processor running, gradually pour in the olive oil until smooth.

  7. Add in some of the reserved chickpea juice, a little at a time, until the hummus reaches a smooth but not runny consistency.
