  2. AUSSIE SHRIMP ON THE BARBIE WITH ORANGE GINGE

  6. 12 Giant Prawns, shelled and -deveined (heads and tails

  7. -intact)

  8. 1/4 c Butter

  9. 1 c Orange juice

  10. -squeezed)

  11. 2 tb Sherry

  12. 1 t Orange Zest (grated)

  13. 2 ea Green onions, tops and white

  14. -(minced)

  15. 1 t Ginger root (freshly grated)

  16. Soak a dozen long wooden skewers in water for 30

  17. minutes. Then push skewers through prawns, lengthwise,

  18. from head to tail with only 1 to a skewer.

  19. Combine all ingredients in saucepan and cook over

  20. medium to low heat, stirring, until butter is

  21. completely melted.

  22. Dip skewered prawns in the orange sauce and position

  23. on oiled grill rack about 4 inches above the coals.

  24. Baste liberally with sauce and grill for 2 minutes.

  25. Turn the prawn over and baste again, cooking for another 2 minutes. Smaller prawn will be done at this

  26. point, but continue basting and turning larger prawn

  27. until they are pink and cooked through. Remove from

  28. heat immediately when done, as they will get tough of

  29. overcooked. Use any remaining sauce for a dip for the

  30. prawns.
