  2. CARROTS, PEAS & POTATOES FLAVOURED WITH CUMIN

  7. 2 lg Carrots

  8. 2 sm Potatoes, boiled & cooled

  9. 2 md Onions

  10. 1 ea Scallion

  11. 3 tb Mustard oil*

  12. 1 1/2 ts Cumin seeds

  13. 2 ea Dried red chilies

  14. 1 1/2 c Shelled peas

  15. 1 t Salt

  16. 1/4 ts Sugar

  17. Dice the carrots & potatoes. Coarsely chop the onions & thinly slice

  18. the scallions. Set aside.

  19. Heat oil in a large skillet over medium heat. When hot, add the cumin

  20. seeds & let them sizzle for 3 or 4 seconds. Add the chilies & stir

  21. 3 to 4 seconds. Put in the onions & stir & cook for minutes. Add the carrots & peas. Stir them for 1 minute. Cover,

  22. turn heat to low & cook for 5 minutes. Uncover, slightly raise the

  23. heat. Add the potatoes, salt & sugar. Stir & cook for 3 minutes.

  24. Add the scallion, heat for 30 seconds & serve.
