  1. 3 lb clams , rinsed well

  2. 2 cups water or fish broth

  3. 1 bay leaf

  4. 1 tbsp olive oil

  5. 4 slices diced bacon

  6. 1 cup finely chopped onion

  7. 1/2 tsp chopped fresh thyme

  8. 2 cups diced red potatoes , 3/4 -inch pieces

  9. 1 cup whipping cream

  10. salt and freshly ground pepper

  11. 1 tbsp butter , room temperature

  12. 2 tbsp chopped parsley

  1. Place clams in a pot.

  2. Add water and bay leaf.

  3. Cover and steam for about 5 minutes or until clams open.

  4. NOTE:

  5. ANY CLAMS THAT DO NOT O PEN -- DISCARD Strain clams, reserving cooking liquid.

  6. Remove clams from shells and discard shells, leaving 4 in the shell for garnish.

  7. Add any extra clam liquid to cooking liquid.

  8. Heat oil and bacon in a soup pot over medium heat and sauté until bacon renders its fat, about 5 minutes.

  9. Add onions, thyme and potatoes to pot and sauté until onions are softened, about 4 minutes.

  10. Pour over clam cooking liquid and bring to boil.

  11. Reduce heat to simmer and simmer for 15 minutes or until potatoes are cooked.

  12. Stir in cream and bring to boil.

  13. Add clams and cook another 2 to 3 minutes or until clams are hot.

  14. Season with salt and pepper.

  15. Add a swirl of butter on top and garnish with parsley.
