  1. 2 piece(s) pumpkin 1 whole(s) egg Well beaten 1/2 cup(s) milk 3/4 cup(s) flour 1 teaspoon(s) baking powder 1 pinch(es) nutmeg/cinnamon 1/4 cup(s) shortening for frying 1 tablespoon(s) cinnamon 1 tablespoon(s) granulated sugar

  1. Grate the pumpkin. Add milk, egg and nutmeg or cinnamon. Mix well. Mix the flour and baking powder togther in another bowl. Add to the milk and pumpkin mixture. Heat the shortening in frying pan. Place spoonfuls of the batter in heated oil and fry like pancakes. Remove from frying pan and onto paper towel and sprinkle with a mixture of cinnamon and sugar. Serve warm.
