  1. 1 envelope Lipton onion or onion-mushroom soup mix

  2. 1/2 cup olive or vegetable oil

  3. 1/4 cup butter or margarine, melted

  4. 1/4 teaspoon thyme

  5. 1/4 teaspoon marjarom

  6. 1/4 teaspoon salt

  7. 1/4 teaspoon pepper

  8. 2 pounds potato es, quartered (I use Russets)

  1. Preheat oven to 425°.

  2. In shallow baking or roasting pan, thoroughly blend all ingredients except potatoes. Add potatoes and turn to coat thoroughly. Bake, stirring occasionally, for one hour or until potatoes are tender and golden brown. Garnish, if desired, with chopped parsley.
