  1. Chicken Salad

  2. 4 cups cubed cooked skinless chicken breasts

  3. 1 cup finely chopped celery

  4. 1/2 cup each: finely sliced green onion and chopped parsley

  5. 2 cups washed halved green or red seedless grapes

  6. 1-2 cups mayonnaise (to taste)

  7. 3 teaspoons curry powder

  8. Salt and ground black pepper to taste

  9. 1 head each: romaine and radicchio lettuces

  10. 2 cups cashews or peanuts (salted or unsalted)

  11. Mix chicken, celery, green onion, parsley and grapes in large bowl.

  12. In a separate bowl, mix 1 1/2 cups mayonnaise with curry powder,

  13. salt and pepper; taste and add more mayonnaise if desired. Fold

  14. into saladArrange mixture over romaine and radicchio leaves on

  15. a serving platter or bowl. Just before serving, add cashews; toss

  16. 12 to 15 servings.
