  8. 1 tablespoon fresh lemon juice

  9. 1 tablespoon olive oil

  10. 1 tablespoon fresh oregano -- minced or -- teaspoon dried -- oregano, crumbled

  11. salt and freshly ground black pepper

  12. 2 four ounce pieces swordfish

  13. -- to 3/4-inch thick)

  14. 1 medium cucumber -- peeled and seeded

  15. 1/3 cup plain yogurt

  16. 1 tablespoon chopped fresh mint leaves

  17. 1/2 teaspoon minced garlic mashed with

  18. 1/4 teaspoon

  19. -- salt

  20. 2 sourdough -- salt, caraway, or -- poppyseed sandwich

  21. -- rolls, sliced in

  22. -- half watercress or arugula leaves -- washed and dried lemon wedges

  23. Prepare the grill. (Alternately, the swordfish can be prepared in a

  24. hot skillet and cooked for 3 minutes per side.)

  25. In a shallow dish combine the lemon juice, olive oil, oregano and salt

  26. and pepper with a fork. Place the swordfish in the dish and turn to

  27. coat with the marinade. Cover and chill while preparing the cucumber

  28. sauce.

  29. Coarsely shred the cucumber onto a clean cloth and squeeze to extract

  30. the liquid. Transfer the cucumber to a bowl and stir in the yogurt,

  31. mint and garlic. Season to taste with salt and pepper. Chill until

  32. ready to use.

  33. 2 to 3 minutes per side depending on thickness

  34. of steak. Transfer each swordfish steak to a roll and top with

  35. cucumber sauce and watercress or arugula. Garnish with lemon wedges.
