  1. 1 tb Soy sauce

  2. 1 1/2ts Minced fresh ginger

  3. 1 lb Boned and skinned chicken,

  4. Cut into 1/2-inch cubes -- GARNISH --

  5. 2 ts Minced fresh orange peel

  6. 2 tb Chicken stock

  7. 1 1/2tb Soy sauce

  8. 1 tb Rice wine

  9. 2 ts Cornstarch

  10. 1 ts Sesame oil

  11. Pinch freshly ground white

  12. Pepper

  13. 1/4c Peanut oil

  14. 6 To 8 snow peas

  15. Cooked rice

  17. -- GARNISH --

  18. -- SAUCE --

  1. + Combine first five ingredients in small bowl.

  2. Add chicken and toss to coat well.

  3. Cover and marinate at room temperature at least 30 minutes, stirring occasionally.

  4. Soak orange peel in enough water to cover, about 5 minutes.

  5. Drain and set aside.

  6. Combine stock, soy sauce, rice wine, cornstarch, sesame oil and pepper.

  7. Set aside.

  8. Heat 1/4 cup oil.

  9. Drain chicken.

  10. Stir-fry in small batches, about 2 minutes.

  11. Remove.

  12. Heat peanut oil with orange peel; stir-fry 1 minute.

  13. Return chicken to wok with snow peas and soy mixture; stir-fry 3 minutes.

  14. Serve immediately over rice.
