  2. SPICY COUNTRY PASTA & CHEESE

  7. 2 tb Chopped onion

  8. 2 Garlic cloves, minced

  9. 1 t Olive oil

  10. 1 c White or shitake mushrooms

  11. -sliced

  12. 1 c Canned italian tomatoes,

  13. (reserve liquid), chopped

  14. 5 sm Black olives, sliced in half

  15. 1/8 ts Crushed red pepper

  16. 2 c Cooked penne or ziti pasta

  17. 2 ts Grated parmesan cheese

  18. Fresh basil leaves

  19. 1. In a 3 quart microwavable casserole, combine

  20. onion, garlic and oil and stir to coat. Microwave on

  21. high (100%) for 1 minute.

  22. 2. Add mushrooms and tomatoes with reserved liquid

  23. and stir to com- bine. Cover and microwave on high for 7 minutes, stirring once every

  24. 3 minutes.

  25. 3. Add olives and pepper and stir thoroughly.

  26. 4. To serve, in serving bowl arrange pasta; top with

  27. mushroom-tomato mixture and toss to combine. Sprinkle

  28. with cheese and garnish with basil.
