  1. 1 c Dark lentils

  2. 1 c Long-grain rice

  3. 1 ts Salt

  4. 3 md Onions, chopped

  5. 2 tb Oil

  1. Put lentils and rice in separate pots. Pour enough boiling water over the lentils to cover them. Add 1 1/2 c boiling water to rice. Simmer both pots, covered, over low heat for 20 minutes. Drain and combine in one large pot. Addsalt and another 1/2 c water. Cover and simmer 15 to 20 minutes until both rice and lentils are tender. Meanwhile, fry the onions in oil until golden.
