  1. 1 large shallot

  2. 1 Tbls olive oil

  3. 1 bunch of asparagus

  4. 1 1/2 cup sour cream

  5. 2 large egg s

  6. 2 Tbls flour

  7. 1 cup shredded cheddar cheese

  8. 1 9" pie crust

  1. Saute first 3 ingredients and place in pie shell. Combine all other ingredients and pour over asparagus. Bake at 425° for 10 minutes then reduce heat to 325° and cook an additional 20 minutes.
