  2. BLUEBERRY OR CHERRY MUFFINS

  6. 2 c Sifted flour

  7. 4 ts Baking powder

  8. 3/4 c Sugar

  9. 1 t Salt

  10. 1 c Frozen or canned blueberries

  11. -(drained)

  12. OR:

  13. 1 c Frozen or canned tart

  14. -cherries (drained)

  15. 2 Eggs

  16. 1/2 c Melted butter

  17. 1 c Milk

  18. CINNAMON AND SUGAR TOPPING:

  19. 1/8 ts Cinnamon

  20. 1/2 c Sugar

  21. Paper muffin cups

  23. DIRECTIONS: Place paper cups in ungreased muffin tins.

  24. Sift dry ingredients together in large bowl. Add

  25. blueberries or cherries to dry mix and mix until well

  26. coated. In a small bowl, beat eggs well. Add melted

  27. butter and milk. Quickly stir liquid mixture into dry

  28. mix. Do not overmix as overblending will cause a tough

  29. texture. Fill muffin cups 3/4 full, and sprinkle

  30. 400-F for minutes until brown.
