  2. Title: Georgian (Russia) Garlic Salad (Aka Marinated Garlic)

  5. 50 To 75 cloves of garlic,

  6. Peeled

  7. 1 c Extra virgin olive oil

  8. 1/2 c Fresh lemon juice

  9. Balsamic vinegar)

  10. 1/2 ts Salt

  11. 1 ts Freshly ground or cracked

  12. Black pepper

  13. 1 tb Herbs

  14. Create your own mixture)

  15. Start by peeling all that garlic. Now bring a saucepan of water to

  16. boil. Once the water is boiling, turn off heat and drop garlic cloves

  17. 3 to 5 minutes.

  18. shorter time if you like a sharper raw garlic flavor; the longer time

  19. results in a much milder garlic flavor.) Remove garlic and plunge

  20. into (or rinse thoroughly with) cold water to stop the cloves from

  21. "cooking" any further.

  22. Dissolve the salt into the lemon juice. Now make a "viniagrette" with

  23. the olive oil, lemon juice/salt, pepper and herbs. Place garlic into jars and pour oil mixture to top the cloves. Refrigerate for a

  24. minimum of 1 week.

  25. After one week, eat straight (or, for the faint of heart, slice up

  26. garlic and mix with your salad greens). Be sure to keep refrigerated.

  27. I don't know how long this will last in the refrigerator because I

  28. eat it up too fast.
