  1. Pansit Bihon Guisado

  2. 1 lb chicken thighs

  3. 3 cups water

  4. 1 pkg (8 oz) bihon (rice noodles)

  5. 1/3 cup salad oil

  6. 2 cloves garlic, minced

  7. 1/2 onion, sliced

  8. 1/4 lb shrimp, cleaned and cut into 1/2-inch pieces

  9. 2 Chinese sausages, sliced diagonally

  10. 1 small carrot, slivered

  11. 1 stalk celery, thinly sliced

  12. 4 cups shredded cabbage

  13. 1/3 cup oyster sauce

  14. 1/3 cup soy sauce

  15. 1 teaspoon pepper

  16. 1 green onion, chopped

  17. 2 hard-cooked eggs, quartered

  18. Lemon wedges

  19. Patis (fish sauce, optional, or use soy sauce)

  20. Cook chicken in the water for 20 minutes. Remove chicken and shred,

  21. saving broth. Soak bihon in the hot broth until soft; drain. In

  22. a skillet, heat oil. Saute garlic, onion, shrimp, sausages for 3

  23. minutes.

  24. Add chicken, carrot, celery, and cabbage; stir-fry for 3 more

  25. minutes. Add bihon, oyster sauce, soy sauce, and pepper; stir-fry

  26. 3 more minutes. Arrange mixture on a large platter; garnish with

  27. green onions, eggs, and lemon wedges. Serve with patis. Makes 6

  28. servings.
