  1. 1 Red bell pepper

  2. 2 cups 125g / 4.4oz Tomatoes - peeled, seeded,

  3. 3 cups 480g / 16oz Long grain rice - cooked, chilled

  4. 3 tablespoons 45ml Chives - chopped

  5. 1/3 cup 78ml Safflower oil

  6. 2 tablespoons 30ml Lemon juice

  7. 2 tablespoons 30ml Vinegar

  8. 1 teaspoon 5ml Garlic - minced

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 1/2 teaspoon 2 1/2ml Fresh cracked pepper

  11. 4 Lettuce leaves

  1. Core the red pepper, remove the seeds and membranes. Cut into a fine dice.

  2. In a mixing bowl. blend the red pepper, tomatoes. rice and chives.

  3. Whip the oil together with the remaining ingredients except lettuce leaves. Pour over the rice Marinate for 2 hours refrigerated.

  4. Place the washed lettuce leaves on chilled plates Top with salad and serve.
