  1. 1/2 cup uncooked oats

  2. 1 cup flour

  3. 2 tsp. baking powder

  4. 2 tsp. sugar

  5. 1/2 tsp. salt

  6. 2 egg whites, lightly beaten

  7. 1-1/2 cups skim milk

  8. 1 tbsp. canola oil or light olive oil

  1. Put the oats in the blender and whirr them until they form a powder. Pour them into a bowl, then add the white flour, baking powder, salt and sugar. In a second bowl, beat the egg whites. Add the milk and oil. Pour into the flour mixture and combine, but don't overmix. Let the batter sit 5 minutes while you spray a griddle or a large skillet with vegetable cooking spray and heat it over a medium burner. Using a 1/4 cup measure, scoop up batter and drop it onto the griddle. When the edges look dry and there are bubbles on top, turn and cook the other side. Serve with maple syrup. Makes 4 servings.
