  2. 1 tablespoon vegetable oil

  3. 3 large onion -- chopped

  4. 4 cloves garlic -- minced

  5. 1 teaspoon ground cumin

  6. 1 teaspoon ground coriander

  7. 1 teaspoon cayenne

  8. 1/4 teaspoon freshly ground black pepper

  9. 1/2 teaspoon ground turmeric

  10. 6 large potatoes -- diced

  11. 4 large tomatoes -- sliced

  12. 1/2 cup water

  13. 2 cups frozen lima beans

  14. salt to taste

  15. 1/2 cup cilantro leaves -- for garnish

  1. In skillet heat oil over medium heat for 1 minute, add onions and fry for about 1 minute. Add garlic and ginger and continue frying for 1 minute. Add ground spices, mix well and add potatoes and tomatoes along with water and cook covered for 12 minutes. Add lima beans, mix, and cook for 5 minutes. Just before serving add salt and garnish.
