  1. 3 Onions - diced

  2. 4 Bell pepper - diced

  3. 1 Celery - diced

  4. 6 Jalapeno - minced

  5. 1 tablespoon 15ml Cayenne pepper

  6. 1 tablespoon 15ml White pepper

  7. 1 tablespoon 15ml Black pepper

  8. 1 tablespoon 15ml Paprika

  9. 1 tablespoon 15ml Granulated garlic

  10. 1 teaspoon 5ml Dry mustard

  11. 1 teaspoon 5ml Cumin - roasted and ground

  12. 1/2 teaspoon 2 1/2ml Thyme

  13. 1/2 teaspoon 2 1/2ml Oregano

  14. 2 Bay leaves

  15. 1/2 Margarine

  16. 6 Red beans

  17. 12 Vegetable broth

  18. 2 Brown rice

  19. 5 Tabasco sauce

  20. To taste salt

  1. Mix together all the spices except the salt.

  2. Saute the onions, bell pepper, celery, and garlic until translucent. Over medium high heat add the spice mixture and 1/2 a cube of margarine.

  3. Saute and stir about 5 to 7 minutes scraping all the good stuff that is sticking to the bottom of the pan. Add the beans, veggie broth and Tabasco sauce and bring to a boil.

  4. Reduce to a simmer. After about an hour, add the rice and continue cooking until the beans are done, about an hour longer.

  5. Add water as needed. Adjust salt and serve.
