  1. Title: PENNE IN VODKA SAUCE

  4. 2 Dried red peppers

  5. 3/4 c Vodka

  6. 2 2/3 c Whipping cream

  7. 10 T Butter

  8. 6 oz Tomato, fresh ripe; peeled,

  9. -seeded & chopped

  10. 1 lb Penne

  11. 3/4 c Parmesan; grated

  12. 3 T Parsley, fresh; minced

  13. Pepper; to taste

  14. Soak red peppers in vodka for 24 hours.

  15. Combine cream, butter and tomatoes in heavy large saucepan. Simmer

  16. 1/3, about 12 minutes. Cook pasta according to

  17. directions. Drain and add to sauce. Boil 1 minute, stirring

  18. constantly. Discard red peppers, and add vodka to pasta. Simmer until

  19. 3 minutes. Mix in

  20. 3/4 cup

  21. Parmesan and parsley. Serve immediately, passing additional Parmesan

  22. and pepper separately.
