  1. 3 lbs 1362g / 48oz Large mussels

  2. 1 tablespoon 15ml Minced garlic

  3. 1 tablespoon 15ml Minced shallot

  4. 3/4 cup 148g / 5 1/5oz Clarified butter

  5. 2 tablespoons 30ml Dry white wine

  6. 1/2 teaspoon 2 1/2ml Salt

  7. Freshly-ground black pepper - to taste

  8. 1/3 cup 30g / 1.1oz Minced parsley

  1. Soak mussels in salted cold water for 30 minutes; drain and rinse. Pull off any beards from mussels; refrigerate until ready to grill.

  2. Combine garlic, shallot, butter, wine, salt and pepper to taste in small saucepan. Cook over medium-low heat until butter is simmering, about 5 minutes. Stir in parsley. Adjust seasonings and keep warm.

  3. Put mussels on hot grill in single layer. Cover and cook until shells open, about 2 to 3 minutes; discard any mussels with unopened shells.

  4. Divide evenly among 4 bowls. Pour hot herb sauce into 4 small dishes. Serve mussels immediately with sauce for dipping.

  5. This recipe yields 4 servings.
