    1. 12 oz enriched linguine pasta

    2. 2 tbsp butter, divided

    3. 30 mL

    4. 1/4 cup grated Canadian Parmesan cheese

    5. 50 mL

    6. 12 oz boneless skinless chicken, cut into bite-size pieces

    7. 1 tsp dried basil or oregano

    8. 5 mL

    9. 3 cloves garlic, minced

    10. salt and pepper

    11. 6 cups chopped ripe tomatoes

    12. 3/4 cup shredded Canadian Mozzarella cheese

    13. 175 mL

    1. In a large pot of boiling, salted water, cook linguine for 10 minutes or according to the package directions, until tender; drain well. Return to pot and toss with 1 tbsp (15mL) butter and Canadian Parmesan cheese
