  6. 2 c All-purpose flour

  7. 2 ts Baking powder

  8. 2 ts Cinnamon

  9. 1 ts Baking soda

  10. 1 ts Salt

  11. 1/2 ts Ground nutmeg

  12. 1 c Sugar

  13. 1/2 c Brown sugar; firm pack

  14. 4 lg Eggs

  15. 1 c Vegetable oil

  16. 16 oz Sauerkraut; rinse, squeeze

  17. 1 Granny Smith apple; peel,

  18. -core, grate coarse, squeeze

  19. -dry

  20. 1 c Walnuts or pecans; coarse

  21. -chop

  22. CREAM CHEESE FROSTING

  23. 16 oz Cream cheese; soft

  24. 1 c Confectioners' sugar

  25. 3 1/2 tb Heavy cream

  26. 2 tb Orange rind; grate

  27. 1 ts Cinnamon

  28. 2 ts Vanilla

  29. 8 round cake pans with waxes

  30. paper. Grease and flour pan. Combine flour, baking powder, cinnamon, baking

  31. soda, salt and nutmeg in medium bowl; set aside. Mix sugars together in

  32. large bowl, breaking up any lumps. Whisk in eggs, then oil, until blended.

  33. Stir in sauerkraut, apple and nuts. Add flour mixture and stir just until

  34. moistened. Spoon into prepared cake pans. Bake about 35 minutes or until

  35. wooden pick comes out clean and cake begins to pull away from sides of pan.

  36. Let cool 10 minutes, then invert cakes onto wire racks to cool completely.

  37. Spread with CREAM CHEESE FROSTING-Whip cream cheese, slowly adding sugar,

  38. until fluffy. Add hevy cream, orange rind, cinnamon and vanilla. Mix well.
