  2. 1 1/4 cups flour -- sifter

  3. 3/4 cup yellow cornmeal

  4. 1 teaspoon salt

  5. 1/2 tablespoon white pepper

  6. 2 eggs

  7. 10 ounces creamed corn

  8. 4 tablespoons milk

  9. 1 1/2 tablespoons olive oil

  10. 1/4 cup jalapeno peppers -- seeded & chopped

  11. 1/2 cup onions -- finely chopped

  12. oil for deep frying

  1. Heat oil in a deep fryer to 350F (180C) 2. Combine dry ingredients with fork.

  2. In a separate bowl combine ggs, corn, milk and olive oil; whip.

  3. Add peppers and onion to egg mixture; mix well.

  4. Fold the wet mixture into the dry mixture.

  5. Using a wet TSP, drop the batter by spoonfuls into the hot oil.

  6. After about 1 minute, flip and allow to cook for 1 more minute until they rise and are golden brown.

  7. Drain on paper towel and serve with hot sauce.
