  5. 2 lb Ricotta

  6. 1 1/2 c Powdered sugar

  7. 4 ts Vanilla

  8. 1/2 c Citron

  9. 1/2 c Orange peel;candied

  10. 4 oz Chocolate;sweet

  11. Process ricotta, powdered sugar and vanilla in food processor until

  12. smooth. Add citron, peel, and broken up chocolate and process with

  13. short bursts just until chopped. Use to fill cannoli shells,

  14. garnishing ends with finely chopped almonds or other nuts.

  15. Variations: Fluffy Riccota Filling: Fold in 1 cup heavy cream, beaten

  16. until stiff. Pistachio Filling: To either of the above fillings add a

  17. few drops of green food coloring to tint pale green. Garnish ends of

  18. filled shells with chopped pistachio nuts. --
