  1. 1 tablespoon virgin olive oil

  2. 1 onion -- finely diced

  3. 2 garlic cloves -- finely diced

  4. 1 quart vegetable broth or water

  5. 4 cups hubbard squash -- pureed

  6. 1 medium squash

  7. 1 teaspoon salt

  8. 1/2 teaspoon black pepper

  9. 1/8 teaspoon cinnamon

  10. 1/8 teaspoon mace

  11. 1 cup heavy cream

  12. 1/2 cup chopped scallion

  13. 15 minutes. Add the squash and the salt, pepper, cinnamon and mace, and simmer for another

  14. 15 minutes. Add the heavy cream, and continue to simmer

  15. 5 to 6 minutes until heated through. Serve garnished with chopped scallion.
