  1. 1 Frozen chopped spinach - (10 oz) - defrosted

  2. 2 tablespoons 30ml Red wine vinegar

  3. 3 Garlic cloves - minced

  4. 1 tablespoon 15ml Minced fresh mint

  5. 1 cup 237ml Low-fat sour cream or non-fat yogurt - excess liquid

  6. Drained

  1. Drain excess water from the spinach by placing it in a sieve and using the back of a spoon to press out all the water.

  2. Combine the remaining ingredients in a small bowl. Mix well. Add the spinach and mix well. Serve with an assortment of raw or lightly cooked vegetables, whole-grain crackers, breadsticks, or pita wedges.

  3. This recipe yields 12 servings. Serving size: 2 tablespoons.
