  11. 1 md Zucchini; diced

  12. 1 md Tomato; diced

  13. 1/2 Sweet onion; diced

  14. Combine all the ingredients and refrigerate for at

  15. least 2 hours. Spoon onto a bed of mixed lettuce.

  16. *Note: you can substitute the liquid from a jar of

  17. pickled jalapeno for the Jalapeno vinegar
