  1. Pasta with Sweet Potatoes and Broccoli

  2. 12 oz radiatore, pasta shells or rigatoni pasta

  3. 3 c 3/4-inch pieces peeled red-skinned sweet potatoes (yams)

  4. 3 c broccoli florets

  5. 2 Tbls olive oil (pref. extra virgin)

  6. 3 garlic cloves minced

  7. Generous pinch ground nutmeg

  8. 1/4 c parmesan cheese (about 1 1/4 oz)

  9. Cook pasta in large pot boiling salted water 5 min. Add sweet

  10. potatoes and cook 5 min. more. Add broccoli and cook unitl pasta

  11. 3 min. longer. Ladle

  12. 1 cup cooking

  13. liquid into small bowl and reserve. Drain pasta and vegetables.

  14. Heat oil in same pot over med. heat. Add garlic; stir 1 min. Add

  15. pasta and vegetables to pot and stir to coat with oil mixture. Add

  16. reserved cup of pasta cooking liquid and toss until mixture is

  17. heated through. Stir in Nutmeg. Season with salt and pepper. Transfer

  18. to large bowl. Sprinkle with Cheese (or cheese substitute).
