  1. 1 1/2 lbs 681g / 24oz Cod fillets - thawed if necessary

  2. 1 Water

  3. 1/4 cup 59ml Lemon juice

  4. 1 cup 62g / 2 1/5oz Onion - sliced (small)

  5. 1 Bay leaf

  6. 4 Peppercorns

  7. 4 Whole cloves

  8. 1 teaspoon 5ml Salt

  9. Minced fresh parsley

  10. Lemom Butter Sauce

  11. 1/4 cup 49g / 1.7oz Butter

  12. 2 tablespoons 30ml Lemon juice

  1. Cut cod into serving-size pieces. Combine water, lemon juice, onion and seasonings. Bring to boil; simmer 20 minutes. Add cod. (If necessary, add boiling water to cover cod.) Simmer, covered, 5 to 10 minutes or until cod flakes easily when tested with a fork.

  2. Remove cod to platter. Pour Lemon Butter Sauce over cod; garnish with parsley.

  3. Lemon Butter Sauce: Melt butter; add lemon juice. Serve warm. (Makes about 1/3 cup)

  4. This recipe yields 4 to 6 servings. Recipe may be halved.
