  1. 4 cups nettles rinsed with boiling water and chopped

  2. 1 onion, chopped

  3. 2 T rice (uncooked)

  4. 2 eggs Juice of

  5. 1 lemon

  6. 1 sprig parsley, root and greens, chopped

  7. 1 stalk celery (with leaves), chopped

  8. 1 T fresh baby dill, chopped

  9. 8 peppercorns, whole

  10. 4 cloves garlic, minced

  11. 1 1/2 liters of water or any broth Salt (to taste)

  1. : 1 Place rice, parsley, celery, spices, onion and salt in the broth orwater in a saucepan and boil 10-12 minutes.

  2. Add the nettles, boil 10 moreminutes. Remove pan from heat, cover with several towels and let standfor at least 30 minutes.

  3. Add lemon juice and garlic; garnish with sourcream and fresh dill. Carbs: (net) in a 1 1/2-cup serving: 7 grams. (Use brown or wild rice to reduce the carb content.)
