  2. Dried beans, soaked

  3. 1 Onion, chopped

  4. 2 Carrots, peeled & sliced

  5. 1 Celery stick, sliced

  6. 2 Tomatoes, chopped

  7. c

  8. Olive oil

  9. Bay leaves

  10. Salt

  11. 1 pn

  12. Pepper

  13. 1 ts

  14. Cumin

  15. 3 pt Stock

  1. Cook the soaked beans in fresh water for 10 minutes.

  2. Drain.

  3. In a soup pot, heat the oil & gently fry the onion.

  4. Add the rest of the vegetables & the seasonings.

  5. Stir well & add the beans.

  6. Ensure that all the vegetables are covered with oil & pour in the stock.

  7. Allow to simmer till the beans are cooked & the vegetables are tender.
