  1. 1 cup 146g / 5.1oz Cottage cheese

  2. 2 tablespoons 30ml Melted butter

  3. 4 Eggs

  4. 1/2 teaspoon 2 1/2ml Baking powder

  5. 1/2 cup 31g / 1.1oz Sifted flour

  6. 1 teaspoon 5ml Sugar

  7. 1/2 teaspoon 2 1/2ml Salt

  1. Mix cottage cheese in a blender or food processor until smooth. Add eggs and melted butter and blend a few seconds. Add flour, sugar and salt and blend again.

  2. Drop batter by tablespoons onto hot griddle or pan. Shape with back of spoon. Turn when underside is light brown.

  3. This recipe yields 25 pancakes.
