  1. SPICY HOT SICHUAN TOFU

  2. Yield: 6 servings

  3. 1 tb cornstarch

  4. 2 ts sugar

  5. 2 garlic cloves (or more), minced

  6. 1 tb hot bean paste

  7. 1 tb sherry

  8. 1/2 to 1 teaspoon Sichuan peppercorn powder

  9. 1 tb hot pepper oil (or more)

  10. 3 tb vinegar

  11. salt

  12. pepper

  13. 1 lb tofu (firm or soft); diced

  14. 1 tb soy sauce

  15. 2 tb corn or canola oil

  16. 1 tb minced ginger root

  17. 1/4 lb fresh mushrooms; chopped

  18. 1/4 c water chestnuts, chopped

  19. 3 green onions (or more), minced

  20. Mix sauce ingredients together in a small bowl. Set aside.

  21. Heat oil in a nonstick pan or wok; brown ginger root. Add tofu

  22. 1 tablespoon soy sauce; stir gently and occasionally for minutes.

  23. Add chopped mushrooms and water chestnuts; stir gently for 2 minutes.

  24. Add minced green onions and sauce mixture and stir for 1 minute.

  25. Serve hot.
