  7. eggplants

  8. cracker meal

  9. oil -- for frying

  10. THE MIXTURE

  11. 1 1/2 cups bread crumbs

  12. 2 each eggs

  13. 1/2 cup Kefalotiri cheese -- grated OR 1/2 cup Parmesan cheese -- grated

  14. 1 tablespoon baking powder

  15. 2 tablespoons parsley -- chopped

  16. 1 teaspoon onion -- chopped

  17. salt and pepper -- to taste

  18. Wash the eggplants and pierce in several places with a fork. Boil in

  19. lightly salted water until tender; drain well. Remove skin and mash the

  20. pulp; measure it. Mix 2 cups of eggplant pulp with the amount of

  21. ingredients listed above and blend well. Shape into croquettes or patties. Roll in cracker meal, and fry until golden brown. - - - - - - - - - - - - - - - - - -
