  1. 1 cup whole grain brown rice

  2. 2 cups water

  3. 1/2 teaspoon salt

  4. 1 cup (4 ounces) shredded Wisconsin Aged Cheddar

  5. 1/2 cup thinly sliced green onion (with some of green)

  6. 1/4 teaspoon freshly ground pepper

  1. Stir together rice, water, and salt in a heavy sauce pan; bring to boil. Reduce heat to low; cover. Simmer until all liquid is absorbed, about 45 minutes.

  2. Remove from heat; let stand covered, about 5 minutes.

  3. Stir in cheese, green onion, and pepper. Cover; let stand 5 minutes to melt cheese.
