  1. 1 tablespoon(s) oil

  2. 2 cup(s) frozen shredded hash browns

  3. 6 eggs

  4. 10 slice(s) Oscar Mayer® Bacon , crisply cooked, crumbled

  5. 1/3 cup(s) green onion slices

  6. 1/4 teaspoon(s) salt

  7. 1/4 teaspoon(s) pepper

  8. 1/3 cup(s) shredded sharp Cheddar cheese

  9. 1 medium (about 1/2 cup) tomato , chopped

  10. Additional green onion slices , optional, for serving

  1. Heat oil in medium nonstick skillet on medium-high heat. Add potatoes; cook 8 to 10 minutes or until browned, stirring occasionally. Spread potatoes to evenly cover bottom of skillet.

  2. Beat eggs, bacon, onions, salt, and pepper with wire whisk until well blended; pour evenly over potatoes. Reduce heat to medium-low; cover.

  3. Cook 10 minutes or until center is set; sprinkle with cheese and tomatoes. Cut into 6 wedges to serve. Garnish with additional green onion slices just before serving, optional.

  4. Each serving provides: 10%DV Vitamin A, 15%DV Vitamin C, 8% DV Calcium, and 10%DV Iron.
