  1. 1 cup (2 sticks) butter, softened

  2. 1 cup packed light brown sugar

  3. 1 large egg yolk

  4. 2 1/2 cups all purpose flour

  5. 1 Tbsp pumpkin pie spice

  6. 1 tsp baking soda

  7. 1 tube (4 1/4 ounces) orange icing

  8. Method

  9. 1.Preheat oven to

  10. 375 degrees. Line baking sheets with parchment paper or leave ungreased.

  11. 2. Cream butter with brown sugar in a medium bowl with electric mixer on low until smooth; stir in egg yolk.

  12. 3. Mix flour, pumpkin pie spice and baking soda in a large bowl. Stir into the butter mixture. Mix until dough is firm and smooth. Form dough into a disk; wrap in plastic wrap and chill dough about 30 mins.

  13. 4. Roll dough to 1/4-inch thickness on a lightly floured surface.

  14. 5. Cut out cookies with a

  15. 3 1/2-inch round cookie cutter and place 2-inches apart on prepared baking sheets. Bake until lightly browned around the edges,

  16. 10-12 mins. Remove from oven and transfer cookies to a wire rack; cool completely.

  17. 6. Create faces on pumpkin cookies using the orange icing.
