  1. 3 lbs 1362g / 48oz Red snapper fillets

  2. 4 Lemon

  3. 1 Onion sliced (small)

  4. 1 cup 110g / 3.9oz Celery - chopped fine

  5. 1 cup 110g / 3.9oz Carrot - grated (large)

  6. 2 Water

  7. 1 Onion minced (small)

  8. 3/4 cup 177ml Chili sauce

  9. 2 teaspoons 10ml Salt

  10. 1/4 teaspoon 1 1/3ml Pepper

  11. 1 cup 237ml Mayonnaise

  1. Bring water to boil in large kettle. Add red snapper, lemon, sliced onion, salt, and pepper. Continue to boil for 20 minutes Drain fish; cool and flake.

  2. Toss fish with minced onion, celery, carrot, chili sauce, and mayonnaise. Adjust salt and pepper to taste. Chill overnight.
