  2. 2 tablespoons cider vinegar

  3. 2 teaspoons chopped fresh basil leaves*

  4. 1/2 teaspoon salt

  5. 1/4 teaspoon ground black pepper

  6. 3 cups cooked rice, cooled

  7. 2 medium tomatoes, chopped

  8. 1 medium cucumber, peeled, seeded and chopped

  9. 1 small red onion, chopped

  1. Directions Whisk together oil, vinegar, basil, salt and pepper in large bowl. Add rice, tomatoes, cucumber and onion; toss. Serve chilled. *Substitute 1 teaspoon dried basil for fresh.
