  1. Pasta with Arugula (vegetarian dish)

  2. 4 to 6 persons

  3. 1/2 (250 gm) pound arugula

  4. 1 cloves garlic, peeled

  5. 4 tablespoons extra virgin olive oil

  6. 1 jar small hill tomatoes

  7. 1 pound pasta

  8. Salt

  9. In a saucepan wide enough saute the garlic in the olive oil medium

  10. heat until it becomes colored a pale brown. Remove the garlic, add

  11. the whole jar of small hill tomatoes and after crashed them saute

  12. for a two/three minutes. Scald the arugula in salted water, and after add in boiling water fresh pasta (orecchiette or cavatelli

  13. are best) or penne and drain arugula and pasta when pasta is cooked.

  14. Add the pasta and arugula to small tomatoes sauce and toss very

  15. thoroughly.
