  1. Creole Beans and Rice

  2. 1 pound dried red beans

  3. 1/4 pound salt pork

  4. 3 cups chopped onion

  5. 1 bunch green onions, chopped

  6. 1 cup fresh parsley, chopped

  7. 1 cup green pepper, chopped

  8. 2 cloves garlic, pressed

  9. 1 teaspoon red pepper

  10. 1 teaspoon black pepper

  11. 3 dashes hot sauce

  12. 1 tablespoon Worcestershire sauce

  13. 1 (8-ounce) can tomato sauce

  14. 1/4 teaspoon dried oregano

  15. 1/4 teaspoon dried whole thyme

  16. 2 pounds Mettwurst or other smoked German sausage, cut into bite-size pieces

  17. Sort and wash beans; place in large Dutch oven. Cover with water

  18. 2 inches above beans; let soak

  19. 8 hours. Drain. Cover beans with

  20. water and add salt pork; bring to a boil. Cover, reduce heat, and simmer over low heat for 45 minutes. Add remaining ingredients

  21. except sausage and rice. Cover and cook over low heat for 45 minutes,

  22. stirring occasionally. Add sausage pieces, and cook until heated

  23. through. Serve over rice. Serves eight.
