  1. 1 cup wholemeal flour

  2. 2 tsp baking powder

  3. 2/3 cup demerera sugar, plus extra for sprinkling

  4. 1 cup milk

  5. 4 tsp margarine or low fat spread Splash white wine vinegar

  6. 1/2 cup cocoa powder

  7. 4 tsp chocolate spread

  8. 2 tsp vanilla essence/extract Pinch grated chocolate

  1. Pop all the ingredients into a large mixing bowl and stir briskly until combined.

  2. Divide the mixture evenly between your muffin cases/cups and sprinkle the top of each with demerera sugar and the grated chocolate, if using.

  3. Sling 'em in a preheated oven at 180C for about 20 minutes, until well risen and just firm on top.
