  2. TRADITIONAL SOUTHERN BUTTERMILK BISCUITS

  6. 2 c Flour

  7. 1 tb Baking powder

  8. 3/4 ts Salt

  9. 1/2 ts Baking soda

  10. 5 tb Chilled solid vegetable

  11. .shortening

  12. 1 c Buttermilk

  13. 1. Preheat oven to 425F. In a large bowl, sift

  14. together flour, salt, soda, and powder. Using a pastry

  15. blender or two knives, cut the shortening into the

  16. flour mixture until coarse crumbs form. 2. Add the

  17. buttermilk, tossing with a fork until a dough forms.

  18. 3. Turn the dough onto a lightly floured surface.

  19. Gather into a disk. Knead lightly a few times until

  20. smooth. (The dough may be made up to two hours ahead,

  21. wrapped in plastic wrap, and refrigerated until ready

  22. 4. Pat the dough to

  23. 3/4 inch thick. Using a

  24. biscuit cutter or a glass dipped in flour, cut out the

  25. biscuits. Place them, two inches apart, onto an

  26. ungreased baking sheet. Gather dough trimmings, pat to

  27. 3/4 inch thick, and cut out more biscuits.

  28. 5. Bake until golden brown, about 12-15 minutes. Serve
