  1. Maple Basted Broiled Bluefish

  2. 8 1/5 cup maple syrup

  3. 8 bluefish fillets (about 2 1/2 to 3 pounds total)

  4. Allspice

  5. 2 Tbsp corn oil

  6. Salt and fresh ground Black Pepper

  7. Pour maple syrup in a shallow bowl. Add bluefish fillets and turn

  8. to coat thoroughly. Sprinkle with spices. Set aside to marinade.

  9. Lightly grease broiling rack or grill with corn oil. Broil or 6 inches form heat for 2-4 min. on each side.

  10. Baste fish with syrup one or twice until fish flakes and the outside

  11. is lightly caramelized.
