  1. Watermelon Preserves

  2. Cut all red meat from rinds, then peel all outer skin from rind.

  3. Cut rind into small cubes and soak in lime water overnight. Next

  4. morning, thoroughly wash lime water out. Cover rinds with water

  5. and cook for 15 minutes. Drain and wash thoroughly again. Chill

  6. rinds with ice cubes; weigh rinds and mix pound for pound with

  7. sugar (equal weights of rinds and sugar). Add 2 sliced lemons and sufficient water to cook slowly for about 3 hours or until rinds

  8. become clear. Seal in sterilized jars.
