  7. 1/2 cup butter -- or margarine, soften

  8. 1/2 cup sugar

  9. 1 teaspoon salt

  10. 4 eggs

  11. 1 pkg dry yeast

  12. 1/4 cup very warm water

  13. 1 Tablespoon lemon rind

  14. 1 teaspoon cinnamon

  15. 4 cups flour

  16. 1 cup milk -- scalded and cooled

  17. fine dried breadcrumbs

  18. 12 ounces farmer cheese

  19. 4 egg yolks

  20. 6 Tablespoons sugar

  21. 1/2 teaspoon salt

  22. 1/2 teaspoon lemon extract

  23. 1/2 teasp. vanilla extract

  24. In large bowl, cream butter with sugar until light and fluffy. In

  25. second bowl (with mixer at medium speed), beat salt with eggs until

  26. they are very thick and pale in color. Stir in the blended butter

  27. 110 degrees

  28. stir until dissolved. With spoon, beat into sugar mixture along with

  29. lemon rind and cinnamon. Add flour alterntely with milk, beating with

  30. spoon after each addition until smooth. Cover and let rise in warm

  31. place (85 degrees) until double, about 1 1/2 hours. Stir down and let rise again until double, about 45 minutes.

  32. Butter, thoroughly, a 3-quart fluted ring mold or bundt pan, dust

  33. with bread crumbs and set aside.

  34. With mixer on high speed, beat together cheese, egg yolks, sugar, and salt until light. Refrigerate.

  35. To the Babka dough, risen the second time (above directions):

  36. Stir dough down and spoon half of it into the prepared mold or bundt

  37. pan. Cover with cheese filling, pressing it down into the dough.

  38. Spoon rest of dough over the filling and let it rise in a warm place

  39. 30 minutes. Heat oven to

  40. 350 degrees. When

  41. Babka has doubled, bake for 45-60 minutes or until done. Remove from

  42. oven and let stand in pan for 15 minutes. Remove to wire rack and cool completely. - - - - - - - - - - - - - - - - - -
