  1. Peel the chayotes, cut them in half, and remove the seed from each of them. Cut the flesh into ½ inch cubes.

  2. Heat the oil in a frying pan. Add the onion, garlic, chayote cubes, and corn. Fry over medium heat for 10 minutes, stirring occasionally.

  3. Add the cream cheese to the pan, stirring gently, until the cheese melts. Stir in salt, then spoon into a warmed dish. Sprinkle with cotija.
